We have a large range of good dry yeasts. We also stock the WYeast liquid yeasts: we ensure the yeasts are always fresh. It may pay to order any specialised yeasts in advance. We buy the WYeast seasonal yeasts as they become available.

DRY BEER YEASTS

These are excellent yeasts and make good beers. If you are using liquid yeasts then a couple packets of dry yeast is a good standby when a starter fails.

LALLEMAND DRY BEER YEASTS-DANSTAR

Two ale yeasts are left in this range that also used to contain Danstar London and Manchester.
DANSTAR WINDSOR ALE YEAST 12G
True ale yeast adding a fruity-estery real ale character to ales. Less attenuative than Nottingham, sometimes reluctant to flocculate.

DANSTAR NOTTINGHAM ALE YEAST 23G
Ale yeast capable of fermenting down to 14C. Attenuates fully, then flocculates out leaving brilliantly clear beer. Flavor neutral, does add some fruit. Great for restarting stuck ferments.

DRY BEER YEASTS-SHIHA

These yeasts come from small German breweries and the range contains a true dried lager yeast and a true dried wheat beer yeast.

LOFERM LAGER 35G SACHET
HiFerm is a true dried lager yeast. Used by smaller German breweries to ferment Pilseners. Note the special rehydration instruction for this yeast. 35g makes for the right pitching rate for clean lagers.

SAFALE 04 11.5G
Dried ale yeast, similar to WY1099 Whitbread. Neutral and slightly fruity, clears well. All Saflager yeasts should be rehydrated at 25C, Safale yeasts at 30C.

SAFALE K97 ALE YEAST
This dry ale yeast is said to be the same strain as WY 1007 German Ale. Crisp clean ales, does not flocculate well. Despite the label on the packets this is NOT a wheat yeast.

SAFALE US 56 ALE YEAST
Produces well balanced beers with low diacetyl and a very clean, crisp end palate. Alcohol tolerant to 12%, 15-24C.

SAFLAGER S23 11.5G
S-23 is a German style dried lager yeast, developing the best of its lager notes under low-temperature fermentation. Good flocculation with excellent attenuation. 10-14C.

DCL 34/70 11.5G
The best of the Saf lager yeasts. Clears well. Said to be a Weihenstephan lager strain with unique technological specs and high flocculation. 9-15C.

WY 1007 XL GERMAN ALE YEAST
Clean crisp ale yeast, the yeast for alts, works at lower temperatures, flocculation low, 73-77%. (13-20 C).

WY 1028 XL LONDON ALE YEAST
Dry, clean, crisp slightly fruity finish. Flocculation medium, apparent attenuation 73-77%, 15-22C. Good yeast for barley wines, Imperial Stouts and other big beers.

Clean crisp, low fruit-mild ester, malt and hop characteristics dominate. Slightly citrus if fermented cool 15-19C, flocculation low to medium, apparent attenuation 73-77%. (15-22 C).
